ALIGUE FRIED RICE

The fried rice version of this aligue is rich in taste and delicious. It is made up of naturally occurring crab fat along with a variety of seafood. I like it a lot and apparently. It reminded me of the seafood paella my family cooked during a special occasion. Enjoy having this meal for your family for lunch or dinner.

How to Cook Aligue Fat Fried Rice

Making this dish at home is quick and easy. It only takes about 30 minutes to complete the process.

Start by tasting seafood. Devein shrimp and remove shellfish from shell. Wash squid and slice.

Once all ingredients are ready, begin cooking seafood. I’m doing this on my own. Heat oil in a pan and sauté shrimp and mussels. Follow until the shrimp are orange. This should take about a minute. I added butter to the mixture to make the taste richer. Use 1 1/2 teaspoons and place in pan to melt. Add squid later. Cook for 30 seconds then cool in salt and pepper. You’ll notice that the sauce is formed. This is good because it is needed later when cooking sticks. Transfer everything in a clean bowl now.

Sounds simple, right? Absolutely, and I’m sure you can do this easily.

Let’s continue the procedure on rice. Using the same pan, heat the oil again and saute the garlic until brown. I can easily add garlic and oil at a time while the pan is still warm. Through this method, garlic is gradually cooked and browned as oil becomes warmer. It will prevent garlic from burning.

Add the onion next to it and saute until smooth. Add some butter to make the rice richer and place the remaining rice in the pan once the butter is melted. Cook rice for 2 to 3 minutes.

Now to the tastiest part. Add crab fat. This is called “taba ng talangka” in Filipino. Cook while stirring until combined with the starch. Mix the lime in the rice and mix the sea sauce. All of these ingredients will be absorbed from the rice. It makes so much sense. Finish by serving the rice with salt and pepper and top with the seafood served before serving.
